Golden Pomodoro Sauce

Ingredients

  • 1/4 cup virgin olive oil
  • 5 cloves of minced garlic
  • 1/2 jar of crushed yellow tomatoes (if whole dice them up) or Cherry tomatoes
  • 1/2 cup of Natural Blonde Bloody Mary mix 
  • 5 large basil leaves
  • 1/2 a parmigiana cheese rind
  • 3/4 teaspoon of salt
  • 1/4 teaspoon red pepper flakes
  • 1 box of pasta
  • 4 tablespoons of butter
  • 1/2 cup of grated Parmigiano Reggiano cheese 

Directions

  1. Follow directions on your pasta box and cook accordingly
  2. In a pan over medium heat add in your olive oil and cherry tomatoes 
  3. Once tomatoes start to blister add in your minced garlic butter
  4. Once the garlic starts to brown add in your 1/2 cup of natural blonde bloody mary mix, butter, cheese rind, basil leaves, salt and pepper. Let everything simmer and cook down to make the thick sauce (add a little more bloody mary mix for desired consistency.
  5. Toss your pasta in with your sauce and serve hot with a fresh shave of Parmigiano Reggiano and chopped fresh basil.
