Golden Pomodoro Sauce

Ingredients
- 1/4 cup virgin olive oil
- 5 cloves of minced garlic
- 1/2 jar of crushed yellow tomatoes (if whole dice them up) or Cherry tomatoes
- 1/2 cup of Natural Blonde Bloody Mary mix
- 5 large basil leaves
- 1/2 a parmigiana cheese rind
- 3/4 teaspoon of salt
- 1/4 teaspoon red pepper flakes
- 1 box of pasta
- 4 tablespoons of butter
- 1/2 cup of grated Parmigiano Reggiano cheese
Directions
- Follow directions on your pasta box and cook accordingly
- In a pan over medium heat add in your olive oil and cherry tomatoes
- Once tomatoes start to blister add in your minced garlic butter
- Once the garlic starts to brown add in your 1/2 cup of natural blonde bloody mary mix, butter, cheese rind, basil leaves, salt and pepper. Let everything simmer and cook down to make the thick sauce (add a little more bloody mary mix for desired consistency.
- Toss your pasta in with your sauce and serve hot with a fresh shave of Parmigiano Reggiano and chopped fresh basil.
